The effort is part of a $25 million dollar, multi-university research grant from the U.S. Department of Agriculture.

Jim Cullor of UC Davis will research E. Coli microbes on cattle hides, and focus on interventions that will minimize them.

CULLOR: "A significant amount of it will be done on the farm and in the transportation system, looking at if it's there, and if so where, and then, how can we go get it."

Other UC Davis researchers are focusing on consumer behaviors that may lead to food-borne illness in meat.

Cullor says California is the largest agricultural and dairy producer in the nation, making UC Davis a prime place for the food safety research.
